Haato Crystal — Kohakuto
Kohakuto. Sugar and agar are cooked together, poured and cut by hand, then dried over several days. Not simply left alone: the pieces are checked each day and turned over one by one when the moment is right, so that they dry evenly. Only the outside dries, into a shell thin enough to give way under a tooth. The centre never does. Japan has called it the jewel you can eat for close to two centuries.
